Stewed beef tendons and briskets is a local dish commonly found in Japanese izakayas, and a famous regional delicacy in the Nagata ward in Kobe, Japan. For this Omusubi, we have stewed beef tendons and briskets full of meaty flavors with Japanese soy sauce and mirin until they are tender. Then, we recreate the dish authentically with a rich texture by adding firm to the bite konnyaku (konjac). And when the filling, wrapped and soaked in the umami-rich sauce, meets the fragrant and sweet Japanese rice, we have another unbeatable combo with a long-lasting aftertaste.
