This vegetarian Omusubi is made with our vegetarian customers in mind, and the tsukudani (simmering in Japanese sauce) filling contains juicy and chunky fresh shiitake mushroom and thick-cut kombu. The shiitake mushroom is cut into thicker pieces to preserve its firm texture, and with the high quality kombu used, umami overflows in this Omusubi. The seasoning is mainly a Japanese soy sauce base, which is saccharine and savoury at the same time, and makes the Japanese rice even more delicious.
