We have picked the Kin no Ibuki brown rice produced only in Miyagi Prefecture for the omusubi. The rice grains have a distinctive, chewy texture and sweetness, which is a filling and health-conscious choice filled with nutrients. The stuffing is inspired by the Tokachi Butadon (pork rice bowl) from Hokkaido’s Tokachi district and using a recipe based on that of a local established restaurant, a secret sweet sauce is created and applied to specially selected thick-cut pork slices before grilling them to bring out their meaty flavour. The savoury pork and the tasty Japanese rice become a perfect match, bringing a new twist to traditional folk cuisine.
